Few mustard greens are as beautiful as this. Mottled green and purple leaves, wavy and ruffled in texture, arise on crisp white-green stalks from a beautiful central rosette.

This is a Brassica juncea-type plant, an Asian mustard (belonging to the same species as tsatsai and gai choi), excellent for flash stir frying with garlic and sesame, or cooked low and slow and combined with other greens into saag dishes, or pickled according to your auntie’s best kimchi recipe. And…just as good…the young leaves can be continuously plucked from the garden and tossed into fresh salads for a peppery flavor profile similar to arugula but more visually striking and quite great at holding dressing with the highly textured leaf surfaces.

This crop matures in about 45-days and performs wonderfully well when planted in mid-summer or fall (spring plantings tend to flower unless they are harvested young and early). This is an easy, unfussy crop, with good frost-tolerance going into the fall. Our seed stock is organically-produced in the Puget Sound region.
